General Conference Weekend

This last weekend was General Conference. I look forward to this weekend every year. Lately, I've been running or biking to the kids soccer game every Saturday. It's been so fun to get back into my longer runs and it felt so great to accomplish a 6-7 mile run. I know I'll be ready for my next half marathon in April. 

 On Saturday the kids had soccer games,I rode my bike 7 miles to their games, and I meet Tim and the kids there. Mason and Allie really enjoy soccer, they are the stars on their team. Mason had 12 goals on Saturday's game, Allie made 4. My parents came to watch, which made the kids pretty excited. They loved having a cheer-leading squad cheering for them. 

On Sunday, one of our favorite traditions is to have a morning breakfast with my homemade buttermilk syrup with either french toast, scones, pancakes or waffles. This year I made pumpkin spice pancakes as well as a pumpkin cinnamon monkey bread. Thank goodness for "free" days on my health plan that I get to enjoy a bite of two of these deliciousness.  ( recipes for the monkey bread and syrup on the bottom of this post. )

The kids love to make blanket and pillow forts while we watch conference, the primary handed out some cute conference packets that the kids spent a good half hour working on, and another fun game we play each conference is the WORD game and Conference Squares. Allie chose the 6 POWER words and mason filled 6 bowls with goodies. Every time one of the power words were said during conference, the kids were able to take a goodies from that bowl. This game always get my kids so excited to watch conference.

 After the morning session of conference, Tim and I took the kids on a drive. We have made this a tradition in our family, because as a kid I loved conference weekend road trips. This year we drove down to Payson and up Payson Canyon and through Nebo Loop. ( which ends 4 miles near Nephi) 

We stopped at Grotto Falls Trail and took a little hike up to the falls. It is a short easy hike, about 30 minutes round trip.  The kids loved seeing the autumn leaves, playing in the water and crossing the tree logs on the trail. The waterfall was awesome and there is a small cave that is right next to the falls that was so cool. It made for a beautiful Sunday. The kids collected different colored leaves and loved being outdoors. As did we.  Then we spent the next two hours driving through Nebo Loop and admired the beautiful colored leaves.

Cinnamon Buttermilk Syrup
  • ¾ cup buttermilk
  • 1 cup of sugar
  • ½ cup unsalted butter (1 stick)
  • ½ tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
Instructions
  1. In a medium sauce pan, combine butter, sugar, and buttermilk and bring to a boil. Once it's at a complete boil, let it boil for 1 minute. Take off heat and whisk in baking soda and vanilla. It will foam up during the boiling, and especially when other ingredients are added. Serve with your favorite pancakes or waffles. Best served warm.

Pumpkin Pie Monkey Bread

24 Frozen Rhodes Rolls (dinner rolls)
1 cup brown sugar
1 box butterscotch cook & serve dry pudding mix not instant
1/4 cup sugar
1 tsp cinnamon
1 stick butter, (not margerine)
1 tsp Pumpkin Pie Spice 

pecans or walnuts, chopped, optional

Right before going to bed, or 10 pm, sprinkle pecans or walnuts into a greased Bundt pan, (I use Pam cooking spray), then put 24 frozen Rhodes Rolls into pan. Mix brown sugar, pumpkin pie spice and dry pudding mix together and sprinkle over frozen rolls. Mix sugar and cinnamon and sprinkle on top of that.

Melt butter and slowly pour over rolls in Bundt pan, trying to cover all of the sugar. Leave on counter overnight and when you get up, the rolls should have risen nicely and you will put Bundt pan on a cookie sheet in a preheated 350°F oven and bake for 30 minutes.
Remove from oven and pour rolls upside down onto a large platter. Serve warm.
These are extremely easy to make and very delicious. And your house will smell wonderful... These are a family favorite. Serve with the cinnamon buttermilk syrup!
