These past few weeks I have been in the baking mood! Everyday I have made some kind of treat. With Mason's Birthday this Friday, I spent Saturday night making Oreo dipped chocolate cookies for his Birthday party, in Blue and Red ( for Thomas the Train color theme). I decided to put a few of the recipes on my blog, so I could have them for my kids to carry on the tradition of making these treats when they get older and for those that are interested in making a easy treat yourself. ENJOY!
Mint Oreo Truffles:

My sister in law made these last year, and I fell in LOVE with them. These were gobbled up in a matter of minutes by my entire family! They are super easy, but taste like you spent hours preparing them.
1 (16 oz) package of Mint Oreo cookies, divided
1 (8 oz) package of cream cheese, softened
1 package of baking chocolate, (whatever you prefer), melted
1 cup white chocolate chips
- Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter. Put balls in fridge for 30 minutes to an hour.
- Dip balls in chocolate place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
- Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.
- Place truffle ball in melted chocolate to coat; roll if necessary. Lift truffle from chocolate using 2 forks (this will allow excess chocolate to run off) before placing on wax paper.
Rolo Turtles:
These Rolo Pretzel Turtles are a staple at our house every Christmas.They are so simple to make, require very little time...
Ingredients:
1 (11 oz) bag of Rolos Caramel Candy
Pecan Halves (I used about 1/2 pound)
Small Pretzels (about 50)
Directions:Preheat oven to 350 degrees.Lay pretzels all over cookie sheet lined with parchment paper or foil. Put a Rolo on top of each pretzel. Place in oven and cook for 3-4 minutes. Pull out of the oven and press a pecan half gently onto each Rolo. Let them set up so you can transfer them to a plate.
Cinnamon White Chocolate Pretzels:
Ingredients:
1 bag of pretzels (16-18 oz2/3 cup oil (I used vegetable oil)1/3 cup sugar1 ½ teaspoon cinnamon½ cup cinnamon sugar for sprinkling1 cup white chocolate chips
Directions:1. Whisk together oil, sugar, and cinnamon.2. Pour pretzels into a microwave safe bowl and pour oil mixture in. Stir until coated.3. Microwave for 1 minute, remove and stir. Microwave 45 seconds more.4. Spread pretzels evenly onto two cookie sheets covered in parchment paper.5. While still warm, sprinkle cinnamon sugar generously.6. Melt white chocolate (on low heat, be careful not to burn) and drizzle over cooled pretzels.7. Store in an airtight container.
Reese's Peanut Butter Rice Krispies Treats

1 Cup Sugar
1 Cup Corn Syrup
1 1/3 Creamy Peanut Butter
4 1/4 Cup Rice Krispies
1 Pinch of Salt
4 Reese's Peanut Butter Cups, chopped
1/2 cup Chocolate Chips
In a large sauce pan over medium heat, melt the sugar, corn syrup, and peanut butter until smooth and evenly combined.
Remove from heat.
Quickly add the salt and cereal and stir to combine thoroughly. Add the chocolate chips and stir again. Wait about 1 min and add the candy, quickly folding the mixture together so as to not smash up the candy.
Line a baking sheet with parchment paper and drop rounded tablespoons onto the sheet. Let cool
